5 Stars Simply the best
This is the ne plus ultra of cookware. If you have to have the very best, and you don’t have to ask how much it costs, then buy it! We had a collection of Calphalon anodized aluminum that over the years had warped, and some of the anodized coating had come off. We replaced everything by buying this set, and were not disappointed in the least. All pieces give beautiful even cooking, excellent distribution of heat, and the handles don’t seem to conduct much heat. I originally thought the large sautoir would not see much use, but I use it all the time. The capacious dutch oven gives excellent browning and braising. The only criticism is that the pasta insert for the stock pot often results in boil-overs when filled to the point where the holes in the insert are covered. It’s easy to overfill.
Actually, the copper core is a bit of overkill on the stock pot, which sees most of its action boiling water and simmering stock, and simpler equipment works fine for that. But, for the other pieces, it is worth the expense for me.
